Made from a single season’s harvest of Centennial wheat — the heirloom spring soft white varietal grown for Laws in the San Luis Valley — this is the first wheat whiskey to be Bottled in Bond in Colorado, fittingly known as the Centennial State. Laws Whiskey House always distills every drop it bottles; the distillery sold no whiskey for its first three years while stock matured. Each mash bill gets its own optimal distillation process and time-intensive sour-mash fermentation, and Laws was the first Colorado distiller to bottle bonded whiskeys.
